Low-Carb Keto Breakfast Casserole

Believe it or not a low-carb keto breakfast casserole can be very tasty as well as filling.

This recipe is for seasoned keto enthusiast or people who are just staring out on the keto journey. Packed with protein, veggies, and cheese it will be a fulfilling way to start your day without compromising your macros.

What are the Ingredients

Remember some of these ingredients are adjustable, such as the dried herbs and spices. It is really based on your keto preferences.

  • 1/2 pound bacon (4-5 thick-cut slices)
  • 1/2 pound ground pork or turkey sausage
  • 3/4 cup heavy cream
  • 12 large eggs
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon each of onion powder, garlic powder, paprika, dried oregano (or 1 tablespoon fresh)
  • 1/2 teaspoon ground black pepper
  • 1 cup diced red bell pepper
  • 3 cups baby kale or baby spinach
  • 1 cup zucchini, sliced into half moons
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Gruyere cheese

Putting it all together

First, in a large skillet over medium heat, make sure to cook the bacon until crisp. When done set aside on a paper towel-lined plate. Making sure to drain the fat. Then cook and brown the sausage and drain as well.

Then, take a table spoon of fat from the skillet, sauté bell pepper and zucchini until it is soft. Add kale and cook it until its wilted. When done set that aside.

Next, get a large bowl, and beat the eggs and mix the heavy cream, herbs, spices along with half of the cheese.

When done with the above mixture you are going to add the chopped bacon, cooked, sausage, sauteed veggies to a Greased 13×9 inch baking dish, pouring the egg mixture over it and sprinkling it with the rest of the cheese.

Last but not least baking

Bake this pan of goodness at 375 degree Fahrenheit for 30mins or until golden and firm. Please allow the casserole to set for 5-10 minutes before cutting into squares and serving.

It can be frozen in a freezer-safe container for up to 3months. Make sure to thaw in the refrigerator before reheating.
